What happened to summer?
I really don't know.
Now fall is a humming
So where did the summer go?

Here I am, sitting in my Apple Shack. I just love welcoming customers to shop in my Apple Shack.

Fall is here! You can see the rows of pumpkins outside, just waiting for you to come and pick the perfect one for carving.

Minnesota Grown SquashVarieties

Acorn - Dark orange flesh. Stores 3 months.

Buttercup - Dry. Orange flesh. Sweeter after a few weeks after harvest.

Butternut - Orange flesh. Keeps all winter. Moist flesh. Tastes best after a few weeks of storage.

Carnival - Pale yellow flesh. Sweet. Best eaten within 4 months.

Delicata - Very sweet, even right after harvest.

To Cook Pumpkin - Use Sugar Pie Pumpkins, the small round ones, for best flavor. Cut in half and bake one hour at 385 degrees. Put open side down in pan with a little water in the pan. Cover with foil. When you can put a sharp knife into the flesh it is done.

Remove from oven, take off foil. Be careful not to get burned by the steam. When cool enough to touch, remove shell and puree the flesh.

Put in containers for freezing, usually 2 cups per box for pies.

The Jarahdale, Long Island Cheese and Cinderella also can be prepared this way. I really like the Jarahdale.
