The spring has its surprises again. We all get so ready to plant and its hard to hold back. Cold crops are fine to keep planting. Cold crops can be planted all of May. Its looking like May 15 and beyond to plant your warm weather crops.

The folk lore story in Carver County was to watch out for the Ice Man Days on May 21, 22, 23 when it could freeze. We have not have that for years but its always good to remember that! I learned that when I came to Carver County. The Ice Man Days came early this year!

Rhubarb Torte

Here is a reprint of the first recipe I in a newsletter back in May 2008. Its so good its worth repeating!

Mix these ingredients like you would a pie crust.

1 cup butter
2 cups flour
2 tablespoons sugar

Pat into a 9" x 13" GLASS cake pan. Bake at 350 degrees for 15 minutes.

 

5 cups chopped rhubarb (from At the Farm) goes on the baked crust after it cools just a bit.

Mix together:
6 egg yolks - beaten (from
At the Farm )
2 cups sugar
4 tablespoons flour
1 cup cream

Pour over rhubarb and bake at 350 degrees for 35-45 minutes.

For the meringue beat 6 egg whites and 1/2 teaspoon of cream of tartar to soft peaks. Add a shake or two from the salt shaker to the cream of tartar if you like.

Then, one tablespoon at a time, slowly add 12 tablespoons sugar, while beating at medium speed. Then beat on high speed until very stiff. Spread over rhubarb mixture in cake pan. Bake at 350 degrees for 15-18 minutes.
