News Update!

On Saturday, Oct. 10, Minnesota Representative, Paul Kohls, was on hand At the Farm for the dedication of my Minnesota Sesquicentennial sign. Kellie Sites, President of the Waconia Chamber of Commerce, introduced Rep. Kohls after I unveiled the sign. Following the sign dedication, Representative Kohls spoke with constituents about their concerns and about his bid for governor of Minnesota.

Why did I have a sign dedication? I hosted a Country Festival at my farm in July 2008 as part of the year-long Minnesota Sesquicentennial celebration. The road signs, that were on interstate highways around the state, became available after they were taken down. Rep. Kohls was instrumental in helping me track down the signs after the Sesquicentennial office closed. This sign is a great memento of the festival I hosted and I wanted to share it.

Brenda's Harvest Chili

1 cup Candy Onion-chopped

2 cloves Garlic-chopped

At the Farm)
Sauté

2 cobs Corn (from At the Farm)
Husk, wash, wrap in wax paper and microwave for 3 minutes. Cool to touch and cut corn off cob.

3 Carrots-diced (from At the Farm)
3 Zucchini-diced (from
At the Farm)
1 Jimmy's Italian Pepper-diced (from
At the Farm)
1 Pablano Pepper-diced (from
At the Farm)
20 Roma Tomatoes-peeled and diced (from
At the Farm)
2 Carmen Sweet Peppers-diced (from
At the Farm)
¼ teaspoon Cumin (or more, to taste)
2 teaspoons Chili Powder (or more, to taste)

1 16 oz. can Red Beans
1 16 oz. can Black Beans
1 16 oz. can White Beans

Add a little tomato juice if needed. Combine all ingredients. Simmer on stove or put in crock pot 3 hours or longer. Serves 12-15.
