Recipe for July - Peach Melba

Here is another recipe that may look familiar to you because I sent it last July too. Like I told you in June, I hate to repeat myself (it makes people think you are old!) but this is another tried and true favorite and also worth repeating!

1 1/2 cup flour
1 1/2 tsp sugar
pinch of salt
2 egg yolks (from
At the Farm)
3/4 cup butter
1 tsp vanilla

Cut like pie crust and add the 2 beaten egg yolks. Spread in a 9x13 glass baking pan.

6 cups fresh peaches (from At the Farm)
1 1/2 cups sugar
9 tlb flour
3 tlb butter

Mix and put on crust. Dot the butter on the top of this.

1/2 cup whipping cream

2 tlb sugar

Beat egg whites until stiff, add sugar and whipping cream. Spread on top of peaches ( It will look like its not enough but it spreads when baking ) Bake at 375 degrees for 1 hour. Serve warm with real whipped cream. It is good cold too!
