Hello, I have learned to make candy. Its a "bug" I have had for six years! I finally bought two great kettles. (I almost mortgaged the farm!) Those
kettles made all the difference in the world! I have mastered fudge, peanut brittle, divinity (see photo at
right and click for recipe) and caramels. I will take orders or you can pick it up when you visit the Christmas Cottage. YES, I've had to open the cottage, due to customer demand,
but on a limited schedule! |

Spritz Cookies 1 pound butter (I use Cass-Clay butter) 1 cup white sugar 2 egg yolks (from
At the Farm) 2 tablespoons cream
1 teaspoon vanilla 4 cups flour |

Cream butter, add sugar and blend well. Add egg yolks one at a time and blend well. Add cream and mix.
Add vanilla and mix. Mix in flour (sifted) and mix well. Chill several hours. Force through a cookie press onto ungreased cookie sheets. Bake at 375 degrees for 8-10 minutes.
Makes 3-5 dozen or more cookies, depending on size and shape. This recipe came from my friend Joyce Neumann. She and her mother made THE best Christmas cookies! They have Norwegian
heritage - great bakers! Enjoy!
