Hello,

Its planting time At the Farm! We have planted cold crops (onions, peas, beets, carrots, lettuce, cabbage and potatoes). I have fresh rhubarb and brown organic eggs for sale. See the rhubarb torte recipe below!

Its still too early to set out your annual flowers. Because the ground is still cold, the plants will go backwards first! Then they have to work harder to grow when the soil warms up. If you wait until the ground is warmer they just grow much better.

Did you ever hear of Iceman Days (May 20, 21, 22)? The Germans in Carver County told me about this when I first came to the area. They said it could freeze, and does freeze, some years on these dates. This just might be one of those years! Just a bit of local folk lore for those of you in Carver County.

Flower containers and hanging gardens are ready to enjoy now.

Happy Spring!

Recipe of the Month - Rhubarb Torte

Mix these ingredients like a pie crust.
1 cup butter
2 cups flour
2 tablespoons sugar
Pat into a 9" x 13" GLASS cake pan. Bake at 350 degrees for 15 minutes.

5 cups chopped rhubarb goes on the baked crust after it cools just a bit.

Mix together:
6 egg yolks (beaten)
2 cups sugar
4 tablespoons flour
1 cup cream

Pour over rhubarb and bake at 350 degrees for 35-45 minutes.

For the meringue beat 6 egg whites and 1/2 teaspoon of cream of tartar to soft peaks. Add a shake or two from the salt shaker to the cream of tartar if you like.

Then, one tablespoon at a time, slowly add 12 tablespoons sugar, while beating at medium speed. Then beat on high speed until very stiff. Spread over rhubarb mixture in cake pan. Bake at 350 degrees for 15-18 minutes.

Enjoy!
