2/3 cup oil
1 cup brown sugar
1 egg
1 cup buttermilk
(substitute for buttermilk is to add 1 tablespoon of lemon juice to a cup of milk, then let
set for one minute) Beat oil and sugar until well blended. Stir in egg and buttermilk.
2 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
Sift flour, salt and soda. Combine with first mixture.
1 teaspoon vanilla
1 1/2 cups diced fresh rhubarb
1/2 cup chopped nuts ( prefer walnuts but pecans would be good too)
Stir in vanilla, rhubarb and nuts. Pour into 2 greased loaf pans (7" x 4").
Topping
1/2 cup sugar
1 tablespoon butter, melted
1 teaspoon cinnamon
1/2 cup chopped nuts (optional-I don't add the nuts)
Mix sugar, melted butter and cinnamon. Sprinkle on top of loaves.
Pre-heat oven to 325 degrees. Bake at 325 degrees for 1 hour.
