Hello,

May 29, 2008 was a great day! The inspectors signed off on the upgrades that were made to my barn this spring. The upgrades were required for the CUP (Conditional Use Permit) to continue my produce business in the barn! So the OPEN sign is out for the summer! Thanks to all of you for your ongoing support, could not have made it without the helpful calls, letters and emails from my loyal customers.

Updating the kitchen area is next . . . need to get my arms around this project but its in the planning stage!

Planting is going well, the rain was great! Rhubarb and chives are available for sale now. Leaf lettuce and green onions are looking good and should be ready soon.

And I have maple syrup and honey available now too. Hope to have Georgia sweet corn in a couple of weeks.

Recipe of the Month - Rhubarb Nut Bread

2/3 cup oil
1 cup brown sugar
1 egg
1 cup buttermilk
(substitute for buttermilk is to add 1 tablespoon of lemon juice to a cup of milk, then let set for one minute)

Beat oil and sugar until well blended. Stir in egg and buttermilk.

2 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda

Sift flour, salt and soda. Combine with first mixture.

1 teaspoon vanilla
1 1/2 cups diced fresh rhubarb
1/2 cup chopped nuts ( prefer walnuts but pecans would be good too)

Stir in vanilla, rhubarb and nuts. Pour into 2 greased loaf pans (7" x 4").

Topping

1/2 cup sugar
1 tablespoon butter, melted
1 teaspoon cinnamon
1/2 cup chopped nuts (optional-I don't add the nuts)

Mix sugar, melted butter and cinnamon. Sprinkle on top of loaves.

Pre-heat oven to 325 degrees. Bake at 325 degrees for 1 hour.
