Its Tomato Canning Time!

Whole Tomatoes - Wash, core, cut in half or quarters.

Pack in clean quart or pint jars. Fill to half inch from top. Wipe rim. Put on a lid and ring.

Water bath for 30 to 35 minutes. To water bath you need a 7 or 9 quart canner with rack. Have water hot and slowly lower rack with jars of tomatoes into water. Boil 30 to 35 minutes. Remove from water and keep out of drafts. The next day you can remove rings.

Tomato Juice - Cook tomatoes to soften them. Put through Foley food mill to remove seeds. Put juice in jars and water bath them 30 minutes.

Stewed Tomatoes - Cook 12 tomatoes. Chop 1/2 cup celery. 1 chopped onion. 1 green pepper (if you like them). 1 tsp kosher salt. 1/4 tsp pepper. Cook to soft, 10-15 minutes. Put in jars and water bath 30 minutes.

Canned Salsa - Roma tomatoes are the best. But you can use whole tomatoes with the romas also. Romas have less juice so thickening takes less time.

General Tomato Hints - Add a tablespoon of lemon juice to your quart or pint jars of tomatoes. Fresh lemon is great! You can freeze leftover lemon juice for next time you need it.

I use no salt or sugar when canning whole tomatoes or juice!
